Goldenfry Yorkshire Pudding & Pancake Mix – make 2 pancakes as per pack instructions
1 small eating apple
25g (1oz) butter
25g (1oz) caster sugar
50ml of water
2 tbsp brandy/calvados optional


  1. Peel, core and slice the apple.
  2. Melt the butter in a pan over a high heat and add the apple slices. Dredge with sugar and cook until the fruit is caramelised.
  3. Remove the apple slices and set aside on a warm plate. Add the water and brandy if using to the pan. Heat and stir to make a glaze.
  4. Divide the apples between 2 hot pancakes, fold and pour over the glaze. Serve immediately with a spoonful of vanilla ice-cream.
